There's several different types of maps on the server, the main one is a peaceful map, the one named cartsworld is a hostile mobs world, both of these have there own nethers, and then there's a sky dimension world named skylands. I don't have any "creative" type maps on the server at the moment.

For building, try to find an area that hasn't been built in yet, and don't build to close to spawn, like anything closer then about 200-300 units would be considered close. You can build in a town(there's a couple.) if you get permission from one of the owners/founders of the town.
